Scientists in Kazakhstan have developed a unique technology for producing marbled lamb using the Kazakh fine-fleece sheep breed. This innovation enables the production of high-quality meat with enhanced characteristics and export potential, according to the website infohub.kz.
According to the Ministry of Agriculture, the technology was developed by specialists from the Kazakh Research Institute of Processing and Food Industry. The method is based on a scientifically grounded system of intensive rearing and fattening of lambs, along with a specially formulated balanced grain feed. The feed includes grains, protein components, probiotics, herbal additives, premixes, and minerals. This feeding system ensures high average daily weight gain, stable metabolism, and promotes even development of intramuscular fat.
During the research, scientists managed to unlock the genetic potential of the Kazakh fine-fleece sheep breed. The intramuscular fat content in lamb meat reached 4-6%, compared to about 2-3% in traditional pasture-based rearing. As a result, the meat exhibits pronounced marbling, with enhanced juiciness, tenderness, and rich flavor.
Improvements were also noted in slaughter performance. Specifically, the yield of the most valuable cuts increased, and the ratio of muscle to fat tissue was optimized. This enhances the commercial value of the product and creates additional opportunities for sales in foreign markets.
It is noted that the resulting marbled lamb meets modern quality and safety requirements for export products. The technology can be implemented in sheep farms in Kazakhstan focused on producing high-quality meat.
