Even a minimal change in plate presentation can nudge people toward healthier food choices, according to researchers who studied how visual presentation affects consumer behavior, infohub.kz reports.
According to Phys.org, the study was conducted by specialists at the Mendoza College of Business at the University of Notre Dame. Through a series of experiments, they found that when sauce is served in a separate ramekin or on the edge of the plate, consumers perceive the main dish as healthier and are more likely to choose it.
The appearance of food shapes initial expectations even before the first bite. If a rich sauce is already mixed into the ingredients or poured on top, the dish seems calorie-laden and heavy. Placing the dressing on the side gives the customer a sense of control over their meal, making the entire portion seem healthier.
The effect appeared not only in restaurant menus but also in evaluations of photos of prepared food on social media. The study authors noted that this simple visual technique could help food service establishments attract health-conscious diners without changing recipes.
